L Nitin Chordia is India's 1st Certified Cocoa & Chocolate Taster and is based in Chennai, India. Nitin operates Cocoatrait which is an initiative to promote knowledge, production and consumption of fine chocolates in India. Nitin hosts the chocolate taster certifications in India in collaboration with IICCT, UK and delivers Level 1 modules for IICCT, in London and Chennai. Nitin along with his wife Poonam (a trained chocolatier and a Level 2 certified chocolate taster) operates Cocoashala, a chocolate school which delivers the basic & advanced levels of Bean to Bar chocolate making training and beyond. Nitin is an active Judge in the International Chocolate Awards in London. Nitin has incubated 2 of India's most innovative and largest bean to bar chocolate brands at his research & incubation centre in Chennai, India. One of them is the world's most sustainable chocolate called Kocoatrait.

Contents of the workshop:

  • Hands-on chocolate-making process: Here participants work on exploring 1 of the 5 bases that we specialize in, focusing on, giving it your own twist & creating variations
  • Understanding the Traditional Chocolate Making Process: This is the first step where we spend time with the participants to explain the basics.
  • Understanding Nutrition claims/Labelling of cocoa & chocolate: Nutrition in chocolates discussed in detail and what role the various ingredients play
  • Most Common Myths in chocolate: We bust the most common myths about chocolate
  • Understanding the various sweeteners that are used in making the base chocolate: A discussion about the various sweeteners 
  • Understanding and demonstration of the tempering process: Explain the tempering process and demonstrate a batch
  • Understanding the various recipes: Discuss and understand the various combinations we can make with the base chocolates.
  • Tasting session: You get to taste the sweeteners and the chocolates made with it!

Note:

  • Parking available on first cum first serve basis
  • Please wear comfortable loose clothing
  • Print out of recipes will be provided

Cancellation policy:

50% refund on or before seven days from the date of the event. No cancellation permitted a week before the workshop.
